Well, JB certainly appears more fluidic because of the nature of transitions that are inherent to it. Also, I found that the choice of launcher makes a difference. But it certainly is not as responsive as GB. This I am saying in terms of time taken to open simple things such as a message or even dialler. The window opens or fades in smoothly but doesn't populate for sometime. I don't think Flashing will help because I have faced the same problem with JB based custom ROMS that I have installed in the past. Thereafter, I flashed back the original Samsung firmware and then upgraded to JB.
As you say ( and I have also suspected), it could be one of the apps or widgets that is draining away all the resources. Will try and identify it and see if that helps. Why I am not happy with the responsiveness is that even games like Temple Run, which used to run fine on GB firmware, freeze up pretty frequently on JB. Of course, pretty frequently here means once in 10 or 15 times, which is bad enough.
